Almond Chickpea Cookies
(Vegan and Gluten Free)

The more I read of Marla Meridith’s blog, Family Fresh Cooking, the more I see why she was named one of the top Mom bloggers by Babble. More and more of her recipes are turning out to be gluten-free and she’s not afraid to experiment with some relatively uncommon ingredients. These cookies are using garbanzo (aka chickpea) flour — if you haven’t tried it yet, it’s well worth the effort to find it and give it a try. I think you’ll be happy with the results.

“I cannot begin to tell you how excited I am about these cookies. Not only can they be made in a pinch but it is my first time experimenting with chick pea flour. The texture and subtle flavor this flour adds is like no other. Combined with brown rice flour it is even more dreamy. If you love chickpeas as much as I do I highly recommend baking up a batch of these. Almond butter and finely ground almond meal adds just enough fat to make these cookies rich, yet very sensible…”
