Grain-Free Pumpkin Pie Bars
from Spoonful of Sugar Free

When I see a recipe like this for what looks like a really decadent dessert, but is actually made from wholesome ingredients, it makes me scratch my head. Why on Earth would you eat something else that does nothing but damage your health with cheap artificial ingredients and a ton of sugar? Even the whipped cream on this is made from only coconut milk and vanilla. Again, why would you go with something like Cool Whip when this is an option?

Alex of Spoonful of Sugar Free has really hit the nail on the head with this recipe for a Grain-Free Pumpkin Pie Bar. To use a tired and overused cliché, you really can have your cake pie and eat it too. She gives a couple of options for sweetening the pie filling itself and I have to say that I much prefer the option with dates as I’m not a big fan of stevia. I totally agree with Alex that I would prefer the version without any sweetener, but you may want to add something for guests that aren’t used to subtle flavors.
