Walnut & Coconut Porridge (grain-free)
from The Spunky Coconut

As I’ve mentioned before, I love the idea of a grain-free porridge for breakfast, I posted a good example of this made from acorn squash on “Top 10 grain-free replacement…” post the other day. For those of you who can tolerate nuts, here’s a fantastic porridge idea from Kelly of The Spunky Coconut. I think [...]

Rosemary & Garlic Dumplings
(gluten-free, casein-free)
from The Spunky Coconut

When’s the last time you had dumplings? For most folks with celiac disease, it’s been a long time. While I grew up in Los Angeles, my parents and extended family are from the south and dumplings have been a part of family get togethers for as long as I can remember. It’s usually quite an [...]

Pumpkin Chai Bars with a Raw Pecan Crust
(vegan, gluten-free, dairy-free)
from The Spunky Coconut

Here’s a great Thanksgiving dessert idea for you — Pumpkin Chai Bars with a Raw Pecan Crust from Kelly of The Spunky Coconut. The hardest part of a recipe like this would not be in making it, but more in not eating all of it before it made its way to the table. I love the [...]

Quinoa: The Controversial Seed
by Kelly from The Spunky Coconut

This is a great post by Kelly from The Spunky Coconut. Quinoa has been the darling of the gluten-free community for at least the past few years. It’s a seed (making it not only gluten-free but grain-free as well) but it can be used in so many recipes that typically call for rice or pasta [...]

Sausage, Egg & Cheese Breakfast Pizza
from The Spunky Coconut

Even before I started on the gluten-free diet, I’ve always loved eggs on a pizza crust. A lot of people don’t think that sounds too appetizing, but trust me, it is awesome. You can cook the egg in a hot oven like Kelly of The Spunky Coconut recommends. I’ve also cooked up an omelette separately and [...]

Grape Cream Popsicles
(dairy-free, refined sugar-free)
from The Spunky Coconut

Grape juice, coconut milk, cashew milk, and honey. Ingredients don’t get much better than that. This is a dessert that I wouldn’t mind giving my kids any time of day. Also, with as hot as it’s been lately, I think it would make them more than happy to try it. – – – “I’m sure [...]

Strawberry Mousse Pie
(gluten-free, dairy-free)
from The Spunky Coconut

Another great dessert recipe using only basic ingredients from Kelly of The Spunky Coconut. I love the fact that she’s using coconut milk in this one — it’s something I’ve been using a lot lately in things like smoothies and just about anywhere else that milk or yogurt might be used. It’s super healthy and really tasty. [...]

Quinoa and Coconut Waffles
from The Spunky Coconut

I’ve been doing a lot of baking lately with coconut flour as well as almond flour and so far I’ve been really pleased with the outcome. These waffles from Kelly of The Spunky Coconut are very similar to ones that I made recently. The only difference would be the addition of the quinoa. I’m really interested to [...]

Citrus Quinoa Salad
from The Spunky Coconut

There have been a lot of quinoa recipes floating around lately. I guess it’s not such a secret anymore and everyone knows about this little gem of a gluten-free superfood. It’s perfect as a salad as Kelly of The Spunky Coconut is showing here, and it’s also great as a substitute for rice and pasta dishes. [...]

Coconut Chocolate Chip Pancakes
(gluten-free, dairy-free, grain-free)
from The Spunky Coconut

Who would have thought that pancakes with coconut and chocolate chips would be gluten-free, dairy-free, and grain-free? Made with some truly great ingredients, including quinoa and ghee, these pancakes from The Spunky Coconut are awesome. – – – “Today Zoe said that she wanted to make pancakes for breakfast. Okay =) So, I thought we would [...]

Nutty Banana Bread
(gluten-free, dairy-free, sugar-free)
from The Spunky Coconut

While I follow a gluten-free diet because of having celiac disease, my kids like to consider themselves my gluten-free buddies and occasionally follow it to stay close to me — that’s at least what I like to think. One of their favorite snacks of all time is banana bread. Just this week, they were making their favorite store-bought banana bread from Trader Joe’s when my 10 year-old was upset that it wasn’t something that I could eat (the Trader Joe’s banana bread IS NOT gluten-free). She went online and started searching the gluten-free sites that she knows about (mostly sites that she sees on this Website :) and came across this recipe for Nutty Banana Bread from The Spunky Coconut. She proudly brought this to my attention and I needless to say gave her a great big smile and even a bigger hug. Even better than the banana bread that we made was the experience of making it with my kids.

Eggs Julia
from The Spunky Coconut

Eggs have to be one of my favorite foods in the world (I think I’ve said this on more than one occasion) and I feel obligated to post virtually any recipe I find for them. I love the Julia Child’s series that Kelly of  The Spunky Coconut is talking about in her latest post and [...]
