Eggplant Pizza by The Domestic Man

I love pizza more than anything and I really thought it was a sad day when I could no longer indulge in take out pizza. The keywords with that last sentence were “I really thought”. Here we are many years later and I’m still enjoying pizza — not the unhealthy stuff, but pizzas made from unexpected real food ingredients. It humors me now whenever I mention these to so-called pizza connoisseurs, they usually just roll their eyes and say it’s not pizza. But once you’ve tried some alternative crusts and know how good they taste and how good they are for you, I think you’ll start to realize the error in their thinking. I know I’ll get a lot of flack for saying this, but given the chance to go back to a real pizza crust without fear of getting sick, I don’t think I would do it. I love the idea of pizza actually being good for you and that’s something that the “real” pizza can never say.

As summer hits (it’s 102 degrees as I type this!), no one’s really in the mood to cook an extravagant creation. I get that. That’s why I have simple, easy recipes like my little eggplant pizzas to get through the scorching days. There’s not a whole lot to this recipe, but it’s the perfect little distraction that seems to be most appealing when we don’t want to spend a lot of time in the kitchen.

In general I don’t like using the oven while it’s hot out, but these little babies cook up relatively fast so I don’t mind them so much.
