Discovering that I could make pancakes out of something other than traditional flours was a great moment in my post celiac diagnosis life. Early on, I tried and enjoyed many of the store-bought variations — but the truth be told — so many of these aren’t doing us any favors in terms of quality ingredients. It didn’t take long for me to to find recipes using some awesome ingredients like almond flour and coconut flour and needless to say, I make and enjoy these regularly, without the guilt that used to come with eating traditional pancakes. Whenever I post a recipe for these alternative flour pancakes, there are inevitably people who come forward looking for other options. The most common request is coming up with recipes that are not only gluten-free, but nut-free as well. Enter this recipe for Plantain Flour Pancakes from Chris Kresser. I’ve had plantains many times at Cuban restaurants both in L.A. and in Portland, but I have never thought of making it into a flour — it sounds really good. Seeing that I’ve tried quite a few of Chris Kresser’s recipes and they’ve all been fantastic, I’ll trust that this one is too. He has also posted a link on where to find plantain flour online — I’m almost certain that won’t be something you’ll find at your local grocery.
