Almond Roasted Heirloom Tomatoes

I love tomatoes. I use them at least 3 or 4 times a week in some way or another. I used to love breaded tomatoes, but for whatever reason, I’ve never gotten around to making a gluten-free version, it’s probably because I’m not a big fan of frying due to having to clean up the splatter from the oil :(

These Almond Roasted Heirloom Tomatoes from Marla Meridith at Family Fresh Cooking are the perfect gluten-free alternative to the fried tomato. Coated in almond meal and baked to perfection, I know these will be beyond delicious.

I have been wanting to post this tomato recipe forever! Believe it or not these photos were taken late last summer.

Then fall hit, life sped ahead and heirloom tomatoes were no longer in season. Now however they are back in full force. These tomatoes are baked not fried, but are reminiscent of really good comfort food.

Roasting the tomatoes with almond meal makes these perfect for salad toppers ~ also great as a hearty, healthy side dish. Perfect for folks on a grain free, Paleo diet.
