Baked Mustard Lime Chicken
from Elana’s Pantry

Chicken is one of the few things I can make that none of my kids will complain about. I have three kids, all with totally different tastes and obsessions and when there’s a night that I can make a single dish that they all love, it would be chicken. All three of them like their chicken very simple with just salt and pepper. I will occasionally surprise them and make a curry sauce to go along with it which always goes over well. The other one that is always well received is what my wife would simply call Chicken Dijon, despite the kids cries of “mustard is gross”, they always ended up liking it and asking for more.

I’m always looking for new ways to serve chicken — ways that won’t get my kids up in arms about trying something new. This recipe for Baked Mustard Lime Chicken from Elana’s Pantry might just do the trick. Simple ingredients (important for all kids meals) make this a great way to keep them eating healthy. Throw in some of Elana’s Paleo Dirty Rice as a side and you’ll have your kids happy with what they’re eating, but you’ll be even happier knowing what they’re eating is actually healthy. To use a really tired cliché, that’s a win-win situation.
