Breakfast Porridge
(Grain, Nut, Soy, Dairy, Sugar, Egg Free)

Back before my celiac diagnosis, I was a big fan of hot cereal. I loved oatmeal, cream of wheat, cream of rice, just to name a few. They were filling, tasty and I thought they were healthy. While I was wrong on the healthy part, filling and tasty they were.

I haven’t tried this particular recipe from Brittany of Real Sustenance looks like a great replacement for hot breakfast cereals and with ingredients like acorn squash and coconut milk, they definitely hit the mark on being healthy. For me, adding blueberries or strawberries to this would make it absolutely perfect.

If you think that acorn squash doesn’t sound very appetizing, think again. Prepared like this, you won’t realize what you’re eating :)

What the heck is a person supposed to eat for breakfast when they are reactive to everything? This question has been running through my head more than I would like the past few weeks as I have made the Paleo switch. ”Paleo” is easy I think at least if you can have nuts and eggs. But what if you can’t? If you have a leaky gut as whacked out as mine you might find that you react to everything but the kitchen sink.

So what does that mean? I have had to get REALLY creative with Meat, Fruits and Veggies. Variety is the spice of life. I will someone manage to get some variety in my diet despite the current restrictions.
