I just realized that I haven’t posted anything from AndreAnna of Life As A Plate recently — and, that is a bad thing — all of her recipes that I’ve tried so far have been fantastic. This one for the Chicken Salad a la Queen is no exception. I love the fact that they’re served in little boats of lettuce — easy to eat and beautiful in terms of presentation. As always, with AndreAnna’s focus on real food as well as everything being not only gluten-free, but grain-free as well make this recipe (and all of her recipes) a winner anyway you look at it.
