While I usually do my best to post healthy gluten-free recipes and ideas (with the occasional cake or dessert recipe) — this one from Matt Armendariz of MattBites looked too good to pass up. If you haven’t heard of Chilaquiles, check out Matt’s recipe here (note, that the chipotles in adobe that he recommends is not gluten-free and can be made gluten-free by simply using fresh chipotles instead of the canned version in adobo sauce). This version with potato chips instead of tortilla chips is a decadent treat that should be approached with caution as it can be very addicting and therefore dangerous to the waistline — but it sounds delicious nonetheless.
