Coconut “cereal & milk”

Another new blog to share, Little Dog Lost by Roland Denzel. While he’s not someone with celiac disease, he’s yet another one of the many who follow a grain-free diet for fitness reasons. He does mention cheating on the weekends sometimes and while this isn’t an option for most of us — Roland is only showcasing his grain-free recipes on his blog. This will be the first of what I’m sure will be many recipes coming from Roland, I can’t wait to see what else he has in store.

This recipe for Coconut “cereal & milk” is a perfect substitute for those corn flakes (which are usually loaded with malt) that some of you most likely used to enjoy for breakfast. Coconut chips, strawberries, and coconut milk — that’s all it is. I’ve tried this before and I can attest to how delicious it is and in fact, I’ll say that it’s a lot more fulfilling (and a lot healthier) than the corn flakes.

My version of a balanced breakfast includes this coconut cereal, plus a couple of eggs on the side. …maybe some bacon or sausage. I’ll eat my veggies at lunch time, thank you.
