Here’s a great ice cream recipe from Elana’s Pantry that uses coconut milk as the base. Other than that, it’s a few simple ingredients and then add to an ice cream maker and you’re in business. I’ve tried recipes like this with coconut milk before and they work fantastic. If you do get the canned coconut milk, try to find the ones that don’t have guar gum or other additives — some canned brands add a lot of unnecessary stuff which always frustrates me.
Another fun thing to do with this recipe would be to sweeten it with added fruit as opposed to the sugar. No matter what you do with it, you’re going to love it.
