I’ve always been a big fan of desserts that are sweetened naturally and without added sugar. I can’t stand the use of artificial sweeteners as they defeat the purpose of trying to eat “real food”. Most of what I eat to satisfy any sort of sweet tooth is fruit based and usually revolves around blueberries, strawberries, and Greek yogurt. Lately, I’ve also been playing around a lot with coconut milk in desserts and so far I’ve been really happy with what I’ve done.
Today, this recipe from Mark Sisson of Mark’s Daily Apple came up and it looks amazing (and simple). This really scares me that something that looks this good could actually be really good for you. Maybe it doesn’t really scare me, but it has me looking at it in total disbelief and wondering if there is some sort of mistake. Looking through the ingredients, it’s a list of some awesome stuff; coconut milk, unsweetened dark chocolate, and the berries of your choice. That’s it!
I am going to be trying this within the next five minutes, as soon as I publish this post. Thank you Mark!!!
We often say that a bowl of thick, creamy Greek-style yogurt mixed with fresh, ripe berries is a good, sensible indulgence dessert option for those that tolerate dairy. As good as it is (especially with some macadamia nuts tossed in), we may have just stumbled upon a dessert that bumps Greek yogurt into second place in the rich and creamy dessert category.
Spoonfuls of fluffy whipped cream layered with berries might not sound like anything new until we tell you that the whipped cream is made entirely from coconut milk – no added sugar and no dairy…
