Quinoa posts usually seem to come in pairs or even groups of three or four — it must be something in the air or that it is just so popular that everyone just continues to write about it. Whichever it is, I’ll keep posting them as it’s pretty tasty stuff.

I’m always in search of good grain-free granola that isn’t filled with corn, oats, or refined sugar and let me tell you, it’s no easy task. Really, the only easy (easy being a relative term here) way to do it is to make your own. While this recipe by Jeanine from The Baking Beauties isn’t labeled as a granola, and really isn’t a granola in the way she has prepared it — I’m going to modify it and make it a granola (I hope this is OK with you Jeanine). There’s absolutely nothing wrong with what she’s done here with the cream cheese and using to top some vanilla ice cream, that actually sounds delicious. I’m going to take the dry ingredients and the fruit and mix it into some plain yogurt. Thank you for inspiring me on this one Jeanine :)

“Alright, everyone. The Philly judges have spoken, and this Baking Beauty is not going to the finals in Toronto. :( I do feel that they made an error, because I not only make AMAZING food using the cream cheese, but I also do it gluten-free. Which, in my books, is rockin’ it! But, so it goes.
