You may have heard me say it before, but I love leftovers. I even sometimes make food with no intention of eating it that same day — I guess you’d just call that prepping for easy meals later :) Along this same path of reasoning, this post from Food Renegade outlines some perfect plans for a weeks worth of gluten and grain-free lunches.
