Paleo Flax Pasta
(Gluten, Grain, Corn, Soy, Dairy Free)

I thought I’d follow the Paleo Flax Tortillas with a recipe for Flax Pasta, both by Brittany of Real Sustenance.

When I was diagnosed with celiac disease back in 1999, there was very little available in terms of gluten-free pasta (come to think of it, I can’t remember if there was a GF pasta on the market then). Once some of the corn and rice based pastas came on the market, I went crazy and ate a lot of it.  Corn and rice doesn’t fit too well into my routine now and when and if I do eat any sort of pasta, I’ve been sticking to pasta made from things like zucchini and kelp (which are surprisingly good).

From Brittany’s photo, this flax pasta resembles some of the dumplings I grew up eating and that in itself makes me want to jump right in and give it a try.  The preparation — compared to most pasta — looks incredibly easy and with cooking times of 15 to 20 seconds, I’m a happy man.

“I figured it might be fun to kick off 2012 with a recipe that for a long time I thought impossible. When you go grain free that typically means giving up Pasta, Breads etc. Something that I’m honestly ok with, as Its seldom that I crave anything like this. But. I know most people feel different.

When I figured out a way to make Grain free Cinnamon Rolls and most recently Tortillas out of Flax it opened up my mind to a whole new set of recipe ideas. Pasta was a priority, as a basic pasta recipe of course can become ravioli, lasagna and so much more…”

    Thanks for sharing. Brittany’s recipes are awesome. We are a gluten and corn free house. This looks like an awesome recipe of her’s to try. I’m also making some low carb low sugar resolutions this year I’m going to fit this one in as well.
