Breakfast has to be one of my favorite meals of the day, followed closely by dinner, and then lunch a very distant third. Besides my steady diet of bacon and eggs in the morning, I love making different yogurt concoctions adding in just about anything I have on hand, especially berries and nuts (my favorites are walnuts, pecans, and macadamias). One thing I’ve never considered adding is quinoa — it’s something I may just have to give a try. This recipe for a Fruit and Egg Quinoa Breakfast Parfait from Marla Meridith of Family Fresh Cooking calls for not only quinoa, but an egg as well. This is yet another high energy breakfast that might just make it into my morning routine.
