Grain-Free Waffles

Have you ever tried those gluten-free waffles in the freezer section of your supermarket? I have and to be honest, they taste a bit like cardboard and have almost completely made me forget about waffles since being on a gluten-free diet. I’ve been making grain-free pancakes out of almond flour and coconut flour for a while now, so I’m not sure why I didn’t think of doing something similar for waffles. There’s no need for me to think about it for too long as Simone from Zenbelly has a great recipe here that is pretty awesome.  If you’ve had bad luck with the store-bought waffles, give this a try and you’ll definitely be back on the road to enjoying waffles. Oh yes, don’t forget the REAL maple syrup — it’s the only way to go.

I bought a waffle iron. It was kind of a big deal, mainly because I had formerly put it in the “kitchen appliances I don’t need” category. What changed my mind? Freaking Pinterest. Having a catering company that is basically a one woman show with the exception of servers and bartenders means that I spend a lot of time on the computer writing menus, doing paperwork, engaging in social media to promote my business and of course wasting time on sites like Pinterest. So I saw a picture of a paleo waffle and Had. To. Have. It.

Then I made the recipe that was the reason for the waffle iron purchase. The result? a big fat meh. Which is fine, because I have this here blog, and love creating recipes and sharing them with you. I hope you enjoy them!
