Green Eggs
from Elana’s Pantry

This may be a little late for St. Patrick’s Day, but this recipe for Green Eggs from Elana’s Pantry will work wonders in getting your kids to sit up and take notice of their food. Whether it’s St. Patrick’s Day or not, these will create a big smile on your kids faces. Even better is that she is using kale leaves to color this. It would be really interesting to see what could be used to make other colors. Any ideas?

When the boys were little we used to have green eggs for breakfast everyday. They grew out of that phase a while ago and now I think this Green Eggs recipe is perfect for St. Patrick’s day.
