While I follow a gluten-free diet because of having celiac disease, my kids like to consider themselves my gluten-free buddies and occasionally follow it to stay close to me — that’s at least what I like to think. One of their favorite snacks of all time is banana bread. Just this week, they were making their favorite store-bought banana bread from Trader Joe’s when my 10 year-old was upset that it wasn’t something that I could eat (the Trader Joe’s banana bread IS NOT gluten-free). She went online and started searching the gluten-free sites that she knows about (mostly sites that she sees on this Website :) and came across this recipe for Nutty Banana Bread from The Spunky Coconut. She proudly brought this to my attention and I needless to say gave her a great big smile and even a bigger hug. Even better than the banana bread that we made was the experience of making it with my kids.

“…Yesterday I was in the mood for some banana bread, but only if I could get more protein in it. Usually I have to make a new bread recipe at least twice (usually more) before it works. Amazingly, this one was a hit on the first try. Full of eggs, quinoa flakes, and almonds, this bread is high in protein. Plus, it tastes really good =) My family doesn’t like the taste of quinoa flour, but we love quinoa flakes. They’re much milder. The quinoa flakes and the almond butter give this banana bread a great nutty flavor. I think you will love it…”
