It’s been such a long hot summer just about everywhere this year and ice cream has been a popular recipe. Not that there’s anything wrong with that. I’ve been loving seeing some of the alternative ingredient ideas — cottage cheese and coconut milk have been a couple of my favorites. This recipe for Piña Colada Ice Cream from Elana’s Pantry looks amazing. I would probably use honey as opposed to the agave (I’m not an agave hater, I just like the flavor of honey better). I’ve even been experimenting a lot with the much more subtle approach of sweetening my desserts only with added fruit. The results have been mixed, but it’s a lot of fun figuring it all out.
