Watermelon has to be one of my all time favorite summertime snacks. It’s also wonderful mixed in drinks or really anything that you’d mix fruit into. It’s a flavor that doesn’t beat you over the head with its sweetness and has just that right subtle flavor that not only refreshes you but satisfies you. London-based food photographer and blogger,
Mowie Kay has created three amazing uses for watermelon — a Granita, soup, and a salad. The one here that really caught my attention was the Granita. I’ve put watermelon in smoothies before and I’ve even toyed with it in the ice cream maker (something I haven’t been successful with yet), but using it in a Granita sounds absolutely perfect. Needless to say, I’ll be trying this recipe soon. I might just try to go a little easy on the sugar and substitute it with honey, but that’s just me. If you’re not afraid of the sugar, dive right in and give this one a try.

I might have mentioned before that I don’t have an ice cream maker, and that’s made me seek out other ways to make and enjoy ice creams over the years. Although not technically an ‘ice cream’, granita is such a simple and fun way to enjoy an iced treat as it’s so easy to make, and is perfect if you have plenty of fruit, plus, it looks great served up in glasses. I’ve kept this recipe very simple as I didn’t want to interfere with the pure watermelon flavour, so the only other ingredient is sugar, as watermelon loses sweetness once frozen…”
