For me, this recipe for Prosciutto-Wrapped Chicken Breast with Mashed Cauliflower from Kitchen Daily is near a perfect dinner as you can get. Totally grain-free, a wonderful vegetable side of mashed cauliflower (and I used to say that I hated cauliflower — not any longer since I discovered mashed cauliflower), and of course the prosciutto-wrapped chicken looks wonderful (Anything wrapped in prosciutto is going to be wonderful).
