Yet another example of a near perfect and naturally gluten-free dish. This one for Roasted Asparagus with Lemon & Parmesan from Jen of Domestic Divas. While I’m no vegetarian, this is something that I could eat at any time of day, any day of the week. I’ve made this for my kids many times and while they resist the idea of asparagus at first, they always finish every bit of it and sometimes even ask for more.

Here’s my favorite way to cook it up. First, I roast it in the oven, which really brings out the sweet flavor.
