Even before I started on the gluten-free diet, I’ve always loved eggs on a pizza crust. A lot of people don’t think that sounds too appetizing, but trust me, it is awesome. You can cook the egg in a hot oven like Kelly of The Spunky Coconut recommends. I’ve also cooked up an omelette separately and then placed it on top of the cooked crust and then topped it with some cheese. Kelly is using rice tortillas for these pizzas and I can speak from experience, they taste great. Another thing we used to make with the tortillas was pizza burritos (sometimes with eggs). With either the pizza or the burrito, you can really have fun with all of the possible topping combinations. While I haven’t found it yet, I’m still searching for a grain-free alternative to a tortilla — once I’ve found that, I’ll be set. Does anyone have any ideas for this?

“Why haven’t I done this sooner?! These sausage, egg and cheese breakfast pizzas are so easy and so yummy. The rice tortilla gets all crispy, and the egg is perfectly over-medium… Yum. My family absolutely adores them.
You can’t tell by the angle of these photos, but the cooked egg whites nearly cover the top. I’ve also made them with another egg yolk per pizza (the yolk is my favorite part). Another whole egg would spill off the sides…”
