Sweet Potato Hash (with Fried Eggs!)

Sweet potatoes have never been at the top of my favorites list, but when seasoned well and with a generous portion of butter, I love them. I can also eat anything (within reason) when it’s served with an egg — an egg can do amazing things to liven up just about any dish. I’ve even made breakfast pizzas with some of my favorite crust alternatives and let me tell you, the egg on a pizza with good tomato sauce is awesome.

This combination of sweet potato hash and a fried egg from Nom Nom Paleo is something that I could eat for breakfast, lunch, or dinner and be totally satisfied. Seasoned with salt, pepper, garlic, onion, and a few others, the flavor in this is making me hungry as I write this. Come to think of it, this combination on the pizza crust would be perfect.

If you’ve got a food processor, this sweet and savory plate o’ carbs can be in your craw in 10 minutes. With a few simple mods, you can transform this side dish into a fast, complete meal: top it with a couple of fried eggs for breakfast or mix in some cooked meat (or bacon!) for a hearty supper.
