I will second what Erica of Stuff I Make My Husband says, “I love carnitas”. If you really love Mexican food, but are afraid of it because you think it’s not the healthiest fare in the world, take a look at this recipe from Erica. It’s simply pork seasoned with some of your favorite Mexican herbs and spices and then a side of cauliflower rice — there’s nothing wrong with that. If you haven’t tried cauliflower rice, it’s good enough to forgo rice completely. While most rice is gluten-free, it’s still a grain and can pose some problem for some folks. Cauliflower on the other hand is a much healthier choice and when prepared like this, a very tasty treat (this is coming from someone who hated cauliflower more than just about anything as a kid). I just wish I could get this at my local Mexican restaurant.

“I love carnitas, a Mexican braised pork dish. I wasn’t sure what was in them, so I decided to Google a recipe. Rick Bayless is my go-to source for Mexican recipes, so I was excited to find that he has a recipe for these. However, it calls for, uh, 4 gallons of lard. No wonder they always taste so good! So, these are not authentic carnitas; it is more like a Mexican pulled pork. I remembered that the best carnitas I ever ate had Grand Marnier in them, so I included that too. Of course I made it in the slow cooker, so when I got home, the kitchen smelled wonderful and dinner was waiting for me!

If you are watching calories, use a lean pork loin for this dish. Otherwise, you can use pork butt or shoulder…”
